Ying Dishes In North and South China

There have been many discussions about the differences in diet between the North and South in China. In Guangdong province for example, soup is an important part of Guangdong cuisine. It stress exquisite (精致的) preparations and provides enjoyment with well-chosen ingredients and beautiful presentation. Soup is usually stewed (炖)for several hours with vegetables or seafood rather than　 meat, and is often considered as the ying dish . It is said that soup should always be served first on the table with great expectations and people will comment after trying.
